Why does stiring the water & grounds stop the brewing process? : Coffee


In this video on cupping, James Hoffmann says he stirs the coffee & grounds after four minutes in order to stop the brewing process. I don’t get why this stops the process? The grounds and the water ater are still in contact, aren’t they? They are just going to settle at the bottom.
